School starts when?!?!!


How in the world, where has time gone. The kids start back to school next week and I start back the  week after that. Praise the Lord, this is  my last year!! (for now while, at least).

For the last few weeks, I have been playing around with making-ahead freezer meals and for the last week my family has been eating/testing my freezer meals. Every single one have been a hit with my very picky 6 year old. That is a challenge all in it own.

My plan over the summer was to stock my freezer with meals, so that when school started I would not have to stress about packing lunches and making dinner. Well that plan when out the window, when I realized what day it was!!! Summer is almost over and school and fall sports is about to be in full swing.

What you see in my freezers:
  • Pancakes and Waffles
  • Banana Breakfast Muffins
  • Tomato Bisque Soup
  • Freeze Peanut Butter and Jelly- (Game Changer!!!)
  • Meat Loaf- (kinda low carb)
  • Chicken Parmesan Casserole-(kinda low carb)
  • White Chicken Enchiladas Casserole-(kinda low carb)
  • Chicken Foil Packs (low carb)
  • Oh and almost forget, BG and I had 3 matches of cookie dough the other day. Their are just waiting to be enjoyed. 


My goals in the next few week.
Meal prep, meal prep, and meal prep.
Most of my freezer meals are for the oven and my little crockpot is setting on the shelf sad and all alone. I need crockpot quick meals. So let the searching begins.

So far this is what I have came up with:
Beef Stroganoff
Italian Chicken
Cool Ranch Chicken
Pork Taco with left turned into BBQ sandwiches
Eggplant Lasagna
Bean Burritos- make-ahead lunches

Next is to make a shopping list and prepare the meal. That will come in the very near future, aka tonight or tomorrow.
